If eating well is tops on your list of resolutions this month, look no further than dark, leafy greens from Yuma.
Deemed the “Sunniest City on Earth” by Guinness Book of World Records, the city (situated in the state’s southwest corner) is home to sunshine and warm weather at least 91% of the year.
Naturally, Yuma County produces roughly 90% of the country’s leafy veggies grown between November and March – which explains why folks have been known to ring in the New Year there with an “Iceberg Drop,” a nod to the region’s rich agricultural history and largest crop: lettuce.
